I once dug out a fairly big douglas fir stump with my FEL on my 26 hp tractor. It was a project and made a really big hole in the ground.

These days, if I can't get a nice big excavator to dig it out then I cut them close to the ground. Cut a bunch of deep saw lines in a hash pattern and let them dry out. When the weather is dry and the stumps are dry, I pile a bunch of cheap charcoal briquettes on them and let them burn as long as possible. It will usually burn down at least a foot.

I saw a video where a guy drilled holes in the stump and periodically filled them with cooking oil before burning. I tried that and actually had worse results.
