Bear jerky is a favorite. But the recipe has unfortunately been lost over time.

Not to mention the fact, that THOSE days are over.

I've never eaten beaver, but I've had black bear steaks and roasts and my wife made chili from half black bear and half moose ground meat. All were very good except for the bear steaks and roasts being a bit tough since they came from a record sized boar in Alaska.
