Grease fittings won't take grease

That could have been worse, but sounds nasty enough. We/ve all seen photos of hands that got sliced by hydraulic oil leaks. Hope you got the grease out of your wound!

I use a pneumatic gun with a "LocknLube" attachment on the business end. That does the trick. Search LocknLube

Had this happen with two grease points.
Used a threading needle to loosen up the ball as dirt had gotten in.

A slight tap often will free up the tiny zerk ball.
If that fails applying heat to the zerk often does the job.

3rd option if both above fail, is a new zerk!
Either way if U own equipment U should have spare zerks in your tractor kit.
Heck at their minimal cost I'd think manufacturers would include a dozen or so with every new tractor sold.

When I got my new Kubota the dealer put in some grease and I was putting in a different type. I had a devil of a time getting that old stuff out; the zerks were good, I'd use a small punch and the springs all depressed fine. I ended up swapping my lube-shuttle tip with a lock-and-lube one that gave a better "bite" as well as heating up the Zerk/ grease to let me get it flowing out (and displace the old stuff). I found the zerks on my Landpride Grapple were a real problem and almost looked like they hadn't really been greased fully.

The fitting itself is fine. I tested it after I took it out. I'm pretty sure the problem is that hole in the side of the pivot pin is clogged up and won't let the grease out of the cavity of the pivot pin into the joint. When the grease gun is out of grease the handle of the gun will pump with ease. In this case I can't push the handle of the grease gun down.

If the fitting allows grease to flow freely and the pin is clogged then it's time to pull the pin, clean everything thoroughly with solvent, then apply new grease. I'd suggest replacing the fitting at the same time.
