As a young one I remember I loved to have scrapple for breakfast. Scrapple and eggs was about as good as it gets as far as I was concerned, fry it until it got real crispy :licking:.
Not sure what its made from but I'm pretty sure it was what ever is left after the pig was butchered, meat cut and the sausage and bacon was packed. If it wound up on the floor it went into the scrapple :laughing:

Yup, Thats scrapple alright. Mom would dust it with a little flower then brown it silly. Last time I had that was when I had to go to Philadelphia maybe 10 years ago. I don't know that ya want to know whats in it, but it's so good ya don't care :eek:

Bird, I'm okay with Spinach either my mom's style or my wife's. They each had a different way, but both were good. My wife loves all greens like you.

Brin, when I first joined the Army, some of the southern guys tended to mix their stuff, particularly their eggs over easy and grits, and called 'em Georgia Ice Cream.

Had biscuits and gravy , sausage patties at the diner this morning , but those grits mixed in with eggs over easy are GREAT !

There's a local gumbo/seafood restaurant that has sauteed shrimp and grits on the menu. Here it is on their "TV Dinner." It's not a true TV dinner, of course, but rather a serving dish with sections like a TV dinner tray. They also have shrimp and grits served in a big bowl. I've never had shrimp and grits anywhere else, but I love them at the Go-Go Gumbo restaurant.

Like Jim (jinman) we've never fixed grits at home. I like them if they're flavored properly. And I'm quite fond of both white and yellow hominy, but rarely eat any hominy for one simple reason; my wife.:laughing: Corn, canned or on the cob, is my wife's favorite vegetable or side dish, but she will not eat hominy or grits.:confused: Makes no sense to me, but that's just the way it is.:laughing:

I'm with you Bird. I don't care for grits.....and I've tried them every way. But I love Hominy......go figure.

For me you've got to have potatoes with breakfast.

Now Biscuits and Gravy is a whole other subject, by itself it's a whole meal. Gravy made with bacon grease and buttermilk biscuits.....Yuuuuuuum. When I was a kid we had that about everyday for breakfast. Some times if we were in a hurry it would be toast and no biscuit, but that was still great. I think we ate it a lot 'cause it was cheap and would really stick to your ribs.

An earlier poster really said it for me. Quick grits with no taste are not something I want. The best grits have a nice flavor and consistency. I've never had the deep fried grit cakes, but I'm gonna try them if I ever see them on a menu. That sounds like something pretty darn good (meaning NOT good for you;) ). I've had corn fritters at several restaurants and corn meal hushpuppies, but never had the fried grit cakes. My mom used to make mashed potato cakes that were a little bit-o-heaven.:D

Were those made by adding a beaten egg, salt, and pepper to the left over mashed potatoes, and then adding flour if necessary to make a consistency appropriate for making "patties", and then frying them? At least that's what my mother did, and what I still do occasionally.:thumbsup:

Dang, you two are making me hungary and wishing mom was in the kitchen (she'd put up with my requests - grammie not quite so much, but still think I'll keep her :thumbsup:). I'm torn between the potato paddies and the fried grits with molasses.
