Why do you need more than one crop of green manure?

To get more organic material into the soil as quickly as possible.

was wondering if anybody could help me answer a question ? i planted winter rye last fall , and now its probably three foot tall . i just want it for deer forage come this fall . do i want to just leave it or mow it through out the summer ? i live in the northeast . thanks for any help .

this is all kinda new to me so bare with me . by headed out , do you mean the long thistle on top ? sorry i'm vegatationally challenged .
