I love eating hot peppers, though as I age I don't think the rest of my body is as cooperative anymore. We grow an assortment from mild up to hot, with 2-3 banana and anaheim plants for general use, then some scotch or other hotties for me. This year my wife picked up a plant that we later realized must have been mis-labeled, and we're still trying to figure out what we got. I'm about due to knock down the current surplus of peppers by cooking a big batch of chile rellenos. Usually roast them, peel the skin, then stuff with cheese/meat/beans and roll in cornmeal to fry. Come September, I'll see how the crop looks and pickle a few jars. We've also had good luck dicing and freezing garden peppers for use throughout the winter. My wife freezes them in 1-cup batches in zip lock bags, which is perfect for recipes.

Some people have already burned out their taste-buds! :rolleyes: No, but seriously. People have different sensitivity to taste, just like some can hear better than others. It's always been my theory that the people who like to eat super-hot peppers probably have naturally less sensitive tongues. Or maybe they just like the pain!

There is a Asian/Middle Eastern large market called Grand Mart about two hours drive in the Washington DC area. Can buy fresh foods from all over the world at very resonable prices. Huge selection of hot peppers from Thailand and India. Always buy a few bags and dry in the oven. I can eat hot peppers like candy.

What I do with my excess chilli's is dry them slowly on a plate on top of a cabinet in the kitchen or dehydrate if I have a bunch and in a hurry and then grind em up and make hot powder to shake on pizzas etc.

Or mostly we freeze them because its quick and throw them in recipes works ok, we pickle a few and may even can some this year we have so many.

I found out right quick a face mask over my nose and mouth is a necessity a whole head mask with shield would be better. My face is on fire during and afterwards quite awhile and I make sure I use the spice grinder out in the garage.

"I grow sweet banana peppers, bell peppers, and pimentos in my garden. " Me too. I love peppers, but when they get too hot, I bow out. I love the long green (Anaheim) and when we can find the fresh Hatch peppers, I usually buy 10 or 15 pounds, roast them on the Weber and freeze them. We use them mainly for breakfast burritos. You never know; one may be very mild, and the next one pretty darn hot. Eat them mostly for the flavor, like a little heat, but too much heat is too much pain. Don't like the flavor of Habaneros.

Had some grown men crying at the poker table last night...

I let a few of the peppers get extra ripe on the plant before picking them :)

About 2 years ago I made a bunch of Jalapeno relish. I dont recall exactly but I think I took a pickle relish recipe and just used diced jalapenos. It was the best thing ever. Last years Jalepeno crop was a failure. This years is just starting to come in so I am planning on trying to do some more and actually document what I do and the results this time.

I love hot peppers. Not to the point of torture though. I like them just enough where they seem to really open up the taste buds in the mouth.

A good jalepeno relish on a Brat! ....
