Since retirement 8 years ago I do all the cooking and my wife does all the baking. No red meat and no pre-processed food, all to keep my cardiologist happy. 50% of our meals are meatless. I grill at least once a week, even in the winter. We rarely eat out and never fast food, again to keep my cardiologist happy....

Blood pressure, weight and cholesterol all significantly better than 8 years ago.

My mom and sisters left when I was 6 years old and moved far away and I stayed with my dad. He was always gone working long days and on weekends he would often leave and return on Sunday evenings. This started when I was in the 6th grade. So I basically raised and fed myself. So that experience is probably what made me learn to cook and I really enjoy it. I don’t bake sweets like pies or cookies or anything of that sort, but I do enjoy coking great meals from scratch. My lasagna and meatloaf are probably the two things most requested. My girlfriend can’t cook to save her life so I do all the cooking for our family. I also always do the thanksgiving meals for our extended family. My favorite is smoking meats on my smoker, grilling, and different things on the blackstone.



With Thanksgiving coming up I will share one of the most requested dishes I get every year - my cranberry salad. It is absolutely amazing!



One small bag of cranberries. If you use the large bag of cranberries then you need to double the other ingredients..

One whole apple (cored)

One whole orange including the peel. The peel adds so much flavor to this dish.

Chopped pecans (leave out or substitute whatever ones you like)

One cup of sugar.


I use a grinder or blender to coarsely chop the cranberry, but the orange is better blended since you don’t want to bite into a large chunk of orange peel. I like to hand chop the apples into tiny little bites because it adds to the texture and flavoring.

Mix it all together and add in the sugar.

You have to make this the night before so that the sugar melts and the flavors combine otherwise it will be gritty. I will typically make a batch of two large bags of cranberries because everyone always requests a take home of the cranberry salad.

I can do some cooking, and we taught our kids the basics. At one point I had a job where I worked 5am to noon. So I cooked most of the supper meals. Fortunately for me, my wife has incredibly low standards. As long as it was hot and ready when she got home she was happy. It didn't hurt that she loves hamburgers on the grill, so we had those almost weekly.

We find ourselves in a meal rut pretty often. I'm not really a pasta fan, but it's so easy, jar sauce, frozen burger, and whatever noodle is there. Wife is the kinda person who just replaces what wr have used, so kinda by default, she gets more or less the same basic things every week, but we do try to do a decent dinner at least once per week.

Lately, been doing a fair number of Blackstone stir fries, normally with beef and chicken, veggies (cabbage, carrots, peppers and onions), rice, and eggs. Got a bit fancy and used sesame oil, instead of peanut,... not a fan of that, it doesn't taste "bad" just a bit off, but the oil straight from the can does kinda stink.

I made a large batch of chili and corn bread for the men's group at church Wednesday.

I mentioned that I would take the left overs home and freeze in individual to go containers for lunches at work.

My buddy took one bite of the chili and cornbread, looked at me and stated, you won't have any leftovers.

He was right

Another guy brought in about 10lbs of smoked deer neck. He made half into BBQ quesadia's, and the other half he left for sandwiches.

There were two quesadias left

If it's good, those guys will clean you out

I entered a chili cook off coming up on the 4th. We'll see how that goes

We eat very little bread and almost no sweets. However, if eating meat is going to kill me, so be it.
I'm doing the carnivore diet right now and it suits me very well. I look forward to getting my bloodwork done next week to see how it has affected my pre-diabetes. I eat absolutely no sugar, no bread, no pasta, no rice and no fruit or vegetables to speak of. My biggest cheat is a baked potato about once a week with butter. Which I shouldn't even do that. KenDBerryMD

My inflammation in my knee is almost non-existent, I feel more alert and no brain fog. My memory has improved. My sleep has improved though I take magnesium citrate to help with that.

I cook a big batch of food on the Traeger smoker or my Blackstone. I just cooked 3lbs. of smash burgers 4lbs of chicken breasts 5lbs of bacon in about two hours. So that will last about 4 or 5 days.

My wife doesn't cook much meat anymore. I cook the meat and she cooks the things she wants to eat, she isn't on carnivore. Before you knock it do some research. The medical community (Drs) has duped us all. So has the big food industry. Tried to vilify red meat, and eggs and red meat and eggs are two of the most nutrient dense and best source of vitamins and minerals you can get.

Red meat is the holy grail for a carnivore. I have a freezer full of it and another half coming in December, which I will split with my two sons. Christmas gift.

Do you have dairy? Milk? Cheese? Just curious.

There seem to be quite a few people who have had immune related diseases (pre-diabetes, arthritis, asthma) improve on low carbohydrate diets, so you aren't alone.

Very little dairy, except butter. I eat lots of butter to get to the fat ratio required for carnivore.
