You have 8 GPM, and that takes about 16 HP at 3000 psi to pump full volume and pressure.
If you send that fluid to a hyd motor, you will probably lose about 15%, so you might want a hyd motor that can develop about 13 HP, and lots of torque.
8 GPM into a 2.0 cu in motor will turn it at 924 rpm , and develop about 955 in lbs.

You get more speed if you go to a smaller cu in motor, but less torque.
I looked at using a PTO pump which could generate more GPM, but the torque was not that great.
