Re: I am in a BBQ grill quandary !!!

gsganzer... to me if you are cooking close and directly over the heat source... that's grillin. To me Bar-B-Que is cooking with a natural source (wood) with direct heat at a distance or indirect heat. Currently I use one of the New Braunfel units with a fire box on one side attached to an upright chamber. I was born and raised in a Bar-B-Que restaurant that my dad owned is this is the way I have always cooked. All our food was cooked over wood from start to finish... not like other franchises today... plus everything was made from scratch... baked beans, coleslaw, mayonaise, Table sauce, basting sauce etc. I still make basting sauce from scratch and cooking chickens takes around 6 hours.... tender, juicy and full of flavor /forums/images/graemlins/smile.gif

Re: I am in a BBQ grill quandary !!!

Mark in NH, Thanks you your research I have fixed my Grand Hall grill. This is the Bakers and Chefs grill sold by Sam's.

I found that their US distribution center is right in Dallas not more than 6 miles from my office! I got flame tamers for $22, 2 new cast iron burners for $37.50, and a regulator for $14. The grill now cooks just like new!!

I feel these parts prices are very reasonable, so I'm now a happy camper. /forums/images/graemlins/grin.gif

Re: I am in a BBQ grill quandary !!!

I guess BBQ is really "smokin". Start a fire with wood in the firebox and put the brisket, sausage, ribs, bologna, turkey, and/or turkey where the smoke and heat from the fire has to sift through the meat on the way out the stack. Typically I will smoke a brisket for 8 - 10 hours, chicken or ribs about 3 hours.

Cooking steaks and burgers directly over the fire is "grillin".

However for some reason they call grills "BBQ grills", so I guess you could cook some chicken on the grill, basting with BBQ sauce, and call that BBQ.

You havn't posted to this thread for awhile. /forums/images/graemlins/tongue.gif
I purchased a Char-Briol grill from Lowes about the same time you started this thread. /forums/images/graemlins/smile.gif It was the 2003 version of the one you posted.
Got to use it a couple of times. /forums/images/graemlins/cool.gif
I have not used the side burner yet. /forums/images/graemlins/smirk.gif
Did you get a grill yet? /forums/images/graemlins/wink.gif

Re: I am in a BBQ grill quandary !!!

Ron,
No, I have not replaced my grill (s) yet. Their replacement as been put on a back burner. I have been trying to help a friend and her two young daugters through some tough times and my spare time and $ have more imprtant places to go.
It is more important to me to see that my friend and her children are happy, healthy, clothed, warm, well fed and have a safe roof over their heads.
I will muddle through with my present grills for another summer.

Re: I am in a BBQ grill quandary !!!

OK Don, I'm trying to take your advice in my grill shopping. Looked at Weber Grills last night. In the Gold Model B there are two lines: The Summit Gold Model B and the Genesis Gold Model B. The Summit also comes in Model C. Summits have enclosed bases and are larger. Also quite a bit more money (~$1400 vs. ~$600). Help???

Of course my other option is to refurb the old Char-Broil. I can get a new burner, vaporizer bar, briquets and grate for about $100 which is probably the route I'll take for another couple of years of use /forums/images/graemlins/smile.gif
