I start with ground elk or deer browned with some tony's cajun seasoning. I cook up an onion and some garlic in a bit of oil then add brown sugar and franks red hot sauce. A frozen quart of leftover beans from beans and cornbread night. 2 cans of chopped tomatoes and a can of tomato sauce. Then the secret ingredient. Chugwater Chili seasoning from Wyoming. I just buy it in bulk and a pound usually last a year or so. If you need a new seasoning to try.Chugwater Chili

Just a side bar here-
Walmart sells store brand "Hotdog Chili" that is really good! And it is only $.50 a can!
Check the can chili area because I have seen it in 2 different labeled cans.
Makes great Chili/cheese dogs.
I am from Cincinnati and there are some great Chili Stores there. Try a "3 way", "4 way" or "5 way"!
My go to was Cheese Coney's! (smaller bun, smaller hotdog with chili and cheese) Used to get 4 of them on the way home from the bar. (they were open until 3am)

Chile Verde

1# pork butt, diced
+/- 12 tomotillas
+/- 12 poblano or Anaheim chilies (Anaheim are a bit hotter than poblano so mix according to taste)
1 large onion diced

Cumin
Small pinch of ground cloves

Brown the pork
Roast the tomotillas, and onoins on a baking sheet at 375F with a little bit of olive oil until the tomotillas are a bit Brown and juicy
Roast the chili's in the grill or oven until the outer skin is charred, place in a bag or covered pan to sweat until the skin is loose, peel, seed and dice.
Combine tomotillas, onion, chilies and pork, add cumin to taste and a pinch of cloves. Simmer uncovered until the pork is tender and the sauce is somewhat reduced. Adjust seasonings to taste, if not hot enough add hotter chili peppers such as jalapenos or husbandry to taste.
Serve with tortillas.

And I don't remember what I paid for it, but I currently have on hand one can of Wolf Brand Chili's "hot dog sauce" that I haven't tried yet; just want to see how it compares with Walmart's store brand.

Great recipes...We're definitely having chili tonight. Will let wife pick favorite from above.

We've used all of our Hatch chiles, so will have to substitute.

Our secret ingredient...shhhh...throw a cinnamon stick in while browning the beef.

And I don't remember what I paid for it, but I currently have on hand one can of Wolf Brand Chili's "hot dog sauce" that I haven't tried yet; just want to see how it compares with Walmart's store brand.

It's snowing; very small flakes, but snow, and 21 degrees. I had to go to Walmart so I bought another can of that 50 cent hot dog chili and noticed the Wolf Brand is 85 cents. And I bought Ball Park beef franks and a package of hot dog buns. We already have plenty of mustard, pickle relish, and sauerkraut on hand, as well as potato chips and corn chips, so we should be alright if we just stay in.:laughing:

I only eat Hot Dog Chili on Hot Dogs!
You forgot the shredded cheddar cheese for on the dogs!
What most people don't realize is the large stores don't make most of the store brands, they just contract with name brand makers.
Two other Walmart store brands that I like are their Rippled Potato Chips ($1.98 large bag) and Cheese Puffs ($1.06 a bag)
