I don't have a double bottom plow but I do have a 16x12 disc. I pulled it with a YM2500 for a while. I put about 100 extra lbs on the disc and the 2500 was really loaded. It also bounced me to death even after I put an air suspension seat on it. I upgraded to a 3110D and it pulls it like a dream.Plenty of power and a much smoother ride. The 3000 and 3110 have much larger tires, but basicly the same frame except for the engine. The bigger tires and the 5 or 6 extra hp really make a difference. As far as being able to do work, like grading, discing, mowing, and box blading, my 3110D is twice the tractor that my 2500 is. During the post Katrina cleanup, I was able to move logs and stumps that my 2500 would not even budge. The only disadvantage that I have noticed is it is harder to handle in close quarters. If all you are going to do is straight ahead work the standard shift will be fine. If you think you are going to be working a box blade with a lot of backing and going forward I would definitely spring for the power shift models. I took the D model somewhat under protest but now I am really glad I did. Having 4 wheel drive has come in quite handy many times. It also helps it steer better on soft or freshly plowed ground.
Revision:
After looking at your original post again and seeing you using a tiller and a bushhog I say the 3110D. The 3110D will also handle a 6ft bushog. One other thing; if you have any gates to drive through measure them first.
