Understandable considering where you live.... I have this rule of thumb and that is, we eat whatever we kill. Mule deer, Whitetail, moose, elk, Antelope (tough as all ****), Big Horn sheep, whatever. I've consumed them all. Havn't shot a wild pig yet but I'm sure I will and we will eat that as well. I like BBQ'd pork.
Local whitetail hunting for me is eating it and they freeze well too. I only shoot does, have enough nice bucks hanging on the walls now and male deer are extremely gamey tasting. Give me a nice doe for the deep freeze any day.
Typically white tail deer venison should not taste gamey regardless of the gender as long as there is a quick clean kill and the entrails are removed within a few minutes of the kill shot...
With a clean kill shot the entire key to quality venison (should be as good or better than grocery store beef just leaner and a little sweeter) is THE COOLING PROCESS...it needs to start as soon as possible after the heart stops...the key to this is opening the carcas, removing the organs and allowing carcase to start cooling down...
If left in the field while a hunt continues the carcase should be propped open and protected from insects...
One mistake that is often made that leads to poor quality or tasting meat is attempting to specifically remove the genitals of male specimens...a knife should not even come close to the genitals (or the musk (tarsal) glands on the legs etc)...genitals should be cut well away when cutting around the **** and dropped with the guts all intact...rupturing any part of the intestines, bladder etc will also taint the meat...
It is also very easy to contaminate the meat when removing the hide...it is paramount to know where all the musk glands are located on the hind legs and be careful to avoid getting a knife near them...Take note that bucks in rut (when many trophies are taken) urinate on their tarsal glands that pretty much affects the entire rear legs...it only takes one touch of a knife to taint any other meat the knife may touch...
