How do you tenderize a gizzard?
I love them, and am glad my wife grew up in an uppity lilly-white type of a household because she won't eat them. But I am happy to make a meal out of fried gizzards, or boild in broth gizzards, hearts & necks with lots of garlic and salt. But I've never heard of a tenderized gizzard. . .

Why just yesterday the wife and I stopped at a little country store that sells pickled turkey gizzards and pickled pork hocks. Also got a can of spam, a loaf of bread and a bottle of mustard.
It just breaks my heart my wife didn't want anything to do with any of it. /forums/images/graemlins/frown.gif /forums/images/graemlins/grin.gif

Bob, I'm not sure how Billy tenderizes them either, although cooking them a short time in the pressure cooker, then frying them works pretty well. However, as with you and some others (must be a female thing), my wife won't eat them either. And the gizzards at the Wal-Mart deli section, which I had for lunch today, aren't bad if you get them fresh cooked.

Bob, just ask your friendly butcher to run them through the tenderizer a couple of times. The first time I did it, the wife thought I was crazy (I am but that's beside the point) but then she asked me to bring home some more of those tenderized gizzards.
It also helped that I was the friendly butcher for 25 years /forums/images/graemlins/wink.gif

Byrd, there's nothing like seeing a big platter full of Squirrel heads on a table. The wife and her dad thought they were better than steak. they would bust open the heads with the back side of a knife and pick out the brains, and she likes the chicken gizzards also. Some necks are more red than others.

Yep, and one little bite of meat on each cheek. My Dad was a much better shot with a .22 rifle than I and when possible, he tried for neck shots instead of head shots so as to not damage any more meat than he had to.
