At first, I thought what a lucky guy, but since it's not what you want, then it's a probelm.
I'm assuming your land is red clay just like mine. If so, you can always dig out the spring, then re-fill it with the clay and ompact it. Two feet would be sufficient.
Of course, the spring might find another spot to come out and you could be chasing your tail on this for years, or it might work.
My other idea is to get a large diamater pipe. Put it on edge and bury it in the ground around your spring. Let it fill up and put a tap on the side of the pipe.
I'm guessing the water will only rise so far, and then equal out. Sealing it might be tricky around the bottom, but clay is good for that, and if it leaks a little, thats alright.
It could be a tank for the cows, or just a place to wash your hands and cool off.
