seeing you are in texas. you should be able to do a DIY evaporator cooler / swamp cooler.

run say 1/2" pex around the water tank. as if winding up string on a spindle. (one layer thick) then run ends to a evaporator cooler outside.
no direct experience with DIY evaporator coolers for actual cooling.

was thinking along the lines of instead of running one of them small "mini fridges" and tossing a roll of pex in it. but with you being in texas. i would imagine an evaporator cooler would be much better / cheaper design long term to chill the water.

How much water are you drinking that you can't keep a jug in the fridge? You could also run a line thru a small dorm style fridge and then the line out to the tap.

I am just curious. My pressure tank has the water line from the well attached to the bottom of the tank with a T. The water line exits the T and goes to the house for drinking and the water softener.

There is not really any water or not much anyway that gets run through the pressure tank. If that is the case with yours, insulation might not help anything. Insulating the water lines would. That said, insulating the tank wouldn't hurt anything either.
