While not as much of a concern as a few months ago when fuel prices were higher. A Hystat tractor will burn more fuel than a geared tractor as the average rpms will be higher. Just something to consider in your final choice.

With loaded tires(R4's) and my backhoe on I regularly hit the relief valve before spinning my tires. Although with that said a lot of my work is on some fairly steep slopes and I am sure the HST has saved me some underwear "cleanup". Takes me a bit longer to do some of my tree digging but well worth the control.

The gear will give you more power to the ground, assuming you have the traction to use it. However, the HST let's you feather the torque in a more controlled manner. Seldom does one run out of power before losing traction, which would say there is little difference at the drive wheels in practice between the two trannies. Different story at the PTO.
