I regard a steel as a required item no matter how the knife is sharpened. I rarely pick up a kitchen knife without giving it a couple of swipes.

That is a very sore subject around here. The Woodworking Shows (TJR Enterprises) which we work very closely with has not had a show in New England for two years now. I scream at him every year to get back into the Big E in Springfield or something in Southern NH (for the tax free advantage), but there wasn't anything on the schedule again this year. Check the show schedule on the site -- we'll be in New Jersey in December, but I know that is a long way from what you consider New England.

Jeff, Will you be at the Wood Show in Collinsville IL on Feb 10-12? It's a St. Louis Show but held at the Gateway Center in Collinsville.

Maybe the TBNers in Eastern MO/Western IL can meet there?

I agree! That's why I suggested he get one? I made a living using knives for 25 years. The steel is used to straighten the edge after use but when that edge is worn off, you have to use something to put the edge back on (my choice, oil stones). The less the angle, the more often you'll need a steel and the more often you'll have to replace the edge.

I've sharpened thousands of knives for customers and friends and they always wanted them sharp enough to shave. For household use, that's too sharp and want hold an edge long.

I have a steel, but am guilty of not using it regularly /forums/images/graemlins/blush.gif /forums/images/graemlins/blush.gif /forums/images/graemlins/blush.gif The knives in question are a few years old now & have not ever been sharpened.

Stephen, at my age, I think I've tried nearly all the cheap methods. I've had the 3 stone set of oil stones (that was the worst and slowest for me), the Chef's Choice (which I thought was pretty good for a short time, but soon decided it wasn't good enough and gave it away), the stationary 1" belt sander followed by finishing on a stone (worked pretty well if you have a fine enough grit or a partially worn out belt), and now I'm just using a EZE LAP diamond stone (model 61F, I think) with which I can do a better job faster than anything else I've tried. And no matter which method I'm using, I do make frequent use of my old butcher's steel.

Now some of the other methods might work better for someone else, and of course, I've never used anything as expensive as the Tormak. It looks like something I would really like, but I just don't have enough use for one to justify the expense.
