Not much beats a turkey sandwich or a turkey club...but my favorite way to use leftover turkey is in chop suey...the combination of oriental vegetables complement turkey very well better than chicken or beef IMO...I like it better over rice noodles or chow mein noodles rather than white rice....
Our recipe is similar to the dozens that are on the Internet using the common ingredients we favor...(secret ingredient is a couple tablespoons of molasses)...

Anyone got a favorite that's beyond the typical hot and cold sandwiches and turkey soup??

The inevitable Turkey Hash. The bits of turkey too small to do much else with, dressing, spuds and gravy all in a casserole and cooked again.

One of my favorites is turkey tomatillo potato hash for breakfast.

When I smoke the bird, didn't this year, my wife makes enchiladas. Something about the smoked meat really makes them special.

Turkey ala king! Make a double batch. Serve half of it over buttered, halved biscuits.

Then tomorrow, put the other half into pre-made pie crusts and you have turkey pot pie!

My fathers golfing buddy came down to visit him yesterday (his buddy has family about 30 minutes away) and we had a great dish of Turkey pot pie for dinner.

Beside just warming the leftover turkey and eating it with leftover sweat taters and green beans, we also had tacos with turkey meat. Hmm, Hmm good.

We cooked 2 turkeys since two different families were coming. When one couldn't make it because the dad had to work, we have plenty of leftover turkey. :licking:

Just the usual here...soup or hot chunks over bread with gravy, mushrooms, green peppers and onions.

This year we had Thanksgiving at my sister's. She cooked one of those organically raised free range locally grown never frozen ones that are kind of a cliché in Vermont. It was the soggiest, most tasteless turkey I've ever had. I don't think it was the prep...she's generally a pretty good cook.
