It is. But it was something I did with Mom and Grandma. Grandma's been gone 20 years, Mom 1.5 years. No one else in family likes it. So I just cherish the memories.

Yes, I would cook up a batch every so often as a tribute to Mom and Grandma. You certainly don't want those memories to fade.

Wow! Fruitcake too? My Mom always had a fruitcake cookin' under her bed. I only get the Collin Street Bakery Fruitcakes these days. Not booze soaked but do in a pinch. CHEERS!

Costco fruitcakes are great--3.5 lb ring for $15. I've had Collin Street, the Entenmann's and those fruitcakes from the monks in southern MO and like the Costco fruitcakes the best.

When I was in Nam and the mess hall had liver and onions I would load up a plate with just that. Man I love liver. Anyway, my wife hates it so we don't have it here at the house but sometimes when out dining if it's on the menu I order it. Umm good. Bob

My boss and I loved liver and onions. When we went out to lunch with 5 or 6 of the engineers in my group, they made me and him sit at a separate table. Weirdos.

Thanks for the Costco info. I've considered trying the others, but never have and I normally enjoy Costco foods.

Never been to Costco, but used to live just 20 miles from the Collin Street Bakery, so I've had some of their fruit cakes, which I like very much, but have also had some of their other baked goods. It ain't cheap, but it sure is good.

No one in my family likes it but me, either. I cherish the memories of my mom making it for me, too. As kids, we got to pick our birthday meal. I chose liver, onions, and bacon every year. My siblings disliked it. My dad disliked it. So they got BLT's and mom and I ate the liver, onions, and bacon. :licking: I still make it for myself every year on my birthday, and my wife and kids eat the bacon.

As a kid, I also got to pick my birthday cake, so I'd always pick confetti anglefood cake with orange frosting. I had that for probably 20 years, then for some reason, I switched to German chocolate cake with pecan frosting, and I've been having that ever since. :licking:

When my Father was alive, he sent me a Collin Street Bakery deluxe fruitcake for Christmas for about 30 years. I really looked forward to those fruitcake.

Now, my next door neighbor has turned me on to Danish Kringles. They are a fruit-filled philo-dough ring. Yum!

Oh, man, you didn't know about the bacon? Man!

So try the recipe I listed above....

- Fry up a pound of bacon in a LARGE skillet.
- Set the bacon aside when its done, on paper towels to drain.
- Slice up a large sweet onion or two, and drop them in the hot bacon grease to cook.
- Put a cup or so of flour on a plate. Salt and pepper to taste.
- Dredge the liver in the flour/salt/pepper mixture and lay it on the onions.
- When the blood starts seeping out the top of the liver (about 3 minutes), turn it over.
- Go another three minutes and that's it.
Take the liver out, put it on a rack on a platter to drip.
Pull the onions out of the grease but don't drain them too much. You want that bacon grease on those onions.

Serve the liver, onions, and bacon and try a little ketchup on the side. :licking:

But after I eat half a pound of that or so, I feel kinda googly-eyed from the grease! :confused2:

For those of you that can't have too much grease... try a George Foreman grill.

- Lay strips of bacon across the entire grill.
- Close the lid and cook the bacon for about 5 minutes.
- Open it up and lay on a layer of sliced onions, separated into the little strips, not whole slices.
- Lay the liver floured/salted/peppered, on the onions and close it up again.
- Check the liver for doneness in about 5 minutes. Keep checking, as cooking times will vary.
Most of the grease drains out with the Foreman grill. It's pretty good that way. :licking:

Another bacon grease recipe....
My mom called it German Potatoe Salad...

- Boil 5 pounds of small, peeled potatoes cubed and a couple large sweet onions quartered, until fork tender.
- Fry up a pound of bacon, but not too crisp, set aside. Don't drain it.
- Note the depth of the bacon grease in the pan.
- Double the depth by adding brown sugar.
- Then double the depth of that with white vinegar.
- Drain the potatoes and put them back in the pot.
- Cut the bacon into 1/2" pieces and add to the potatoes.
- Pour the bacon grease/brown sugar/vinegar mixture onto that.
- Stir carefully to mix it all up.
- Heat it up a bit more. Serve warm.

Enjoy! :licking:
