If you're going to try it for the first time (Aus exports the meat world-wide, it may be in your local grocery) I'd suggest cutting it into strips and cooking it (fry-pan, grill) as you would for a fajita or a stir-fry. Minced patties are also good. It's a very 'rich' dark red meat.
I haven't seen it in any grocery stores here in Wyoming. We're kind of in the "outback" of the United States so that's not a surprise.
