I'm not sure what your intentions are, once you get it running, but the undercarriage doesn't look too bad, considering.
The bottom rollers have plenty of edge left, so it's not like it should walk off the rails, if on a slope. If it had a blade, you could check the bearing condition by raising it up, and kinda' try to pry up on them. You could probably still do it with a pry bar, and block. Just lightly pry up on the lip of the roller, and see if there is any slop. I notice it has the button head zerks on it. So you may want to be looking around the shop for one, or, he may have dedicated a grease gun with this head.
The rails don't look too bad. At least the bottom rollers haven't appeared to made contact with the pin area. Looks like the adjuster is run out quite a ways... Not sure how that adjuster works. All I've dealt with, the yoke was attached directly to the hub axle. That one appears to rock forward.
The sprocket doesn't look too bad, but hard to tell in the picture. The more they are worn, the sharper the points are. Blunt on the ends, if any, is good...
You can reach between the rails, and feel the pins. You should feel some wear on the back side. If they have been turned, you will feel wear on front, and back sides of the pins...
If the tracks ever need to be separated, it is a job. But don't think you'll need to worry about that for a while...
You may want to check out the link to Red Power Magazine. Then look under the Construction thread. Search for T20, there appears to be more than I imagined there would be, that have them. I'm sure those guys will lead you in the right direction.
That is a great idea to take lots of pictures, before disassembly. If you have a CD burner, or another way to save the pictures, for an extended period of time... Get a virus that ruins your pics, and you've lost them.. Trust me on that one..., LOL..
