Ummm... smokers, grills, flat tops or what have you.

What's everyone making this weekend?

I started a brisket this morning. Just salt, pepper and a little garlic powder. I'll cook to about 145, then wrap in butcher paper for the remainder. Looking at about 12 hours. I'll make some German Potato Salad and coleslaw to go along with it.

I'll brine a whole chicken tonight and then spatchcock and smoke tomorrow.

I've had a pork belly curing with a Cajun rub since Monday. I might smoke it on Monday, or let it go to the following Monday.

I'm remembering those who gave everything for their country.

My oldest and youngest will be visiting. Belated birthday visit.

We will celebrate the birthday with baby back ribs, taters, cornbread and beans. (Plus whatever they bring)

After spending a night last week on the Queen Mary in Longbeach, I reflected on the sacrifices made by the "Greatest Generation" and all others that made sacrifices for what and where we are today.

I too reflect on those who gave it all and allows us the freedom to enjoy another year/day of freedom. As with all good celebrations we often enjoy food...

I smoked a rack of "meaty"baby backs. let's smoke about 3.5 hrs on hickory chunks and charcoal. Then wrapped in foil (after trimming the end ribs that were already at 201-205 and getting a taste of what was to come). Basted with some Kinder blackcherry BBQ sauce at 350 for about 30-40 mins, made a dump cake with fresh blackberries and blueberries. Wife made some deelicious baked beans.

Then took it over to duaghters house and we shared ours with them/theirs with us and enjoyed the company.

Nothing beats grilling on real chunk charcoal. Decades ago I bought a real Brinkman BBQ grill made from what appears to be a section of karge diameter steel pipe with welded on ends and heavy duty grills. Sucker weighs about 200 pounds and has served me well (gets sandblasted and painted with HT black every year), for decades now.

I flat despise anything grilled on a propane fired grill tastes terrible to me and same with processed charcoal briquettes. Only use chunk charcoal and light it with a chimmney lighter and a small wad of newspaper. I prefer apple wood chunk charcoal and I make my own mostly.

We did a roast on it yesterday. Slow cooked and good.
