We make this for just the two of us, up to about 20 people. Very easy.

Meatballs
Knead together:
1/2 lb ground pork
1/2 lb ground beef
1 egg
1/2 cup corn flour
4 crushed garlic cloves
1 tsp cinnamon
1/2 tsp cloves
salt and papper

Form into balls about the size of golf balls, set aside.

Sauce
1/2 large onion, sautee in oil in dutch oven.

Add:
1 28oz can crushed tomatoes
1 chicken bouillion packet
2 tsp cumin
3 to 5 canned chipotle chiles, chopped up, with sauce.
(or use 6-8 rehydrated dried red chiles such as gaujillo, new mexico, chile negro)

Cook sauce at a simmer (should be pretty thick) for 15 min or so.

Then:

Put the meatballs in, they should be almost covered in sauce.
Make sure sauce is still simmering, cover, cook for 20 min.
Turn the meatballs over, cook for another 20 min.
