mold

i need an answer for my better half, how do you keep bread from molding. we took a loaf out of the freezer yesterday, @ 6:00am; this morning, @6:00am, it has mold on a couple of pieces. this is wheat bread, and we put it in the freezer as soon as we get it. every time this happens, my better half turns to me and says " would you explain this to me?" and i stand there with my usual dumb look.

Is this store bought or home baked? For home baked, I add a tablespoon of honey. It inhibits mold growth pretty well.

If its home made bread w/no preservatives this could make the differents,for I was told bread w/no preservatives will still age even in the freezer..oh by the way I'm no home maker,for I still use super glue instead of a needle and thread. /w3tcompact/icons/wink.gif

I don't have an answer, but wonder whether that bread was a little old when you bought it. We don't buy anything but whole wheat bread, and very rarely have bread mold, but if we buy a loaf of bread out here in one of the little country stores, which we seldom do because it may be moldy when we get it./w3tcompact/icons/frown.gif Incidentally, we buy the cheapest store brand bread, and awhile back we were in the supermarket and when I went to get a loaf of bread, there was none of the cheap store brand wheat bread on the shelves, but the delivery man from the biggest major brand in this area was putting his brand on the shelves. I turned to my wife and said, "It looks like they're out of (the store brand)" and the delivery man said, "Just a minute", went to his truck and brought in a tray of the cheap stuff./w3tcompact/icons/laugh.gif Maybe it's just a matter of getting used to something, but I actually like the cheap one better than the high priced ones.

who can tell how fresh it is when you buy it?? it comes from a really busy local store, but the low calorie wheat bread is causing the problem. i think its because of the low cal..the good/high cal stuff always last longer and taste better.

It's real simple, you are buying Moldy Bread.
Mold spores are already developing in the bread when you buy it, and if you weren't freezing the bread they'd be showing the day after you brought it home from the store.
This type of thing happens in commercial bakerys, when spores are in the slicing/wrapping area. The spores infest the bread as it is cooling, and aren't visable till the bread gets to the store.
It occurrs more frequently in the summer, but can happen any time of the year.
I watched Wonder Bakery in Rochester loose a week's production because the railroad parked the circus train cars next to the bakery, on a siding. The whole cooling area was infested with spores from the elephant cars, and had to be sanitized.

Cheap bread is the same as expensive bread. I used to work for 7/11 there store brand bread was baked by Wonder bread bakeries, the only difference was the wrapper. Lots of big companies private lable for others Wal Mart, Food Lion, 7/11, etc.
