There are many great eating establishments in Memphis. (too many, if you'd see my waistline :p ) As far as BBQ, Corky's used to be a BBQ team in the Memphis in May contest and parlayed that into a great chain, even FedExing their menu worldwide. My favorite, however, is the Commisary, in Germantown just outside of Memphis. Mmmmm.. pulled pork sandwich, slaw, baked beans and a cold beer. Life doesn't get much better than that. Well, maybe if you have a slab of their ribs.

And there's Gus' Fried Chicken.....nobody does it better than him. He used to be off I-40 between Memphis and Nashville, near Jackson, TN. People would drive all the way from Memphis to his hole in the wall just for his chicken. The place was a dive, but the food was awesome. Place burnt to a crisp, probably from all the greasy dust. After the fire, many helped him get reestablished in Memphis. Still great chicken, too.

Chicken in the Dutch Oven

Whole chiken, onion, garlic, various spices, soy sauce, balsamic vinegar, beer and someo other stuff ;-)

Didn't get a shot of the whole thing cooking, oven covered in charcaol though...

Yep, Robert, that does look good. I sometimes wonder about our cooking, though. I went to the grocery store this morning and was considering doing a "beer can" chicken today. But when I looked at their whole raw chickens vs. the ones they'd cooked in the deli and noticed barely over a dollar difference in price . . . well, I'm lazy. I bought one they'd already cooked.:eek:

Same thing happend to us a few weeks ago. You know, there's something wrong with this country when you can buy a whole, cooked chicken for less than a whole raw chicken. It just ain't right!

Yeah but they wernt BEER can chickens ! ;) Gee havent done that in awhile, will have to give it a shot again ! :)

You're right, Scotty. It was seasoned a little differently from the way I would have done it, bit in spite of that, it was quite tasty.:D
