You pull back the ring on the female end of the hose and hold it back while you pull the hose off.

Just a few drops.

If there's no pressure in the lines, theoretically at least, the tractor does not need to be off, but I always turn the tractor off and move the joystick around in all directions to release all pressure before unhooking the lines.
<font color=blue>If I am using the tractor without the loader and I bump the handle will a thousand pounds of pressurized oil come spraying out?</font color=blue>
No, the quick couplers are closed, sealed, or whatever you want to call it, so the oil can't come out; you would just be opening the relief valve.
And if you lost your manual, you need to get another one. It really does outline the proper procedure for removing and replacing the FEL and it's pretty simple. You have to roll the bucket forward a bit, lower it to the ground and continue downward pressure to take the weight off the front wheels, then you can easily pull the pins that hold the loader frame in the uprights (and you can swing down the supports or braces that hold it while it's off), then you curl the bucket until the loader frame is free from the uprights before shutting off the tractor, relieving the pressure in the lines, and unhooking them. Putting it back on is just the reverse.
