Pine ridge I had to do something similar prior and had to use a 4 pole 3 pos switch, not the two pole you showed.
that way the each wire for each dirrecction had it's own pole... 3 pos because other wise there was no STOP in between and these things can toss the windings pretty easy..
right now I'm so sleepy I can think only about 1/8th speed..
but basically red wire to 2 poles, and black wire to 2 poles when switched UP red wire on pole 1 connects to red terminal on motor and black wire on pole 3 connects to black terminal. when switched to center no connection between poles and terminals so motor is off. when switched DOWN the red wire on pole 2 connects to the black terminal and the black wire on pole 4 connects to the red terminal. there is low chance of messing this up if wired as stated, there with be red wires to 2 of the 4 poles and black wires to 2 the other 2 poles, then ther black terminal will be connected to 2 switched legs (one on top of pole 3 and one on bottom of pole 2) and the red terminal will be connected to 2 switched legs (one on top of pole 1 and one on bottom of pole 4 ).
as you see you will have empty legs but no empty poles on the switch...
