The 2700 rpm sounds about right for the 2320. That's the PTO-designated rpm for my 4010.

There is a "rated PTO" mark at 3K, so I guess I will run it there.

I have been varying the engine speed for the past few days - I used to be a truck mechanic and did a lot of diesel engine work back in the 70's and early 80's... but these little 3-banger Yanmars are a whole different breed than a nice big Detroit 6V92T.
