You don't have to disable OR bypass the switch. On my GC1720, you simply need to get off the seat, stop it from bouncing against the suspension system - essentially hold it down with one hand and engage the PTO to your heart's content. The bouncing of the seat will trigger the engine kill if you engage the PTO and just 'hop' off.

There has to be a bypass to be able to operate the PTO without the driver in the seat.
There are many cases where you can use a tractor to power stationary objects. Chippers, generators, and water pumps immediately come to mind.

It should say in the operator's manual.

On Kubota, you just flip the seat up so the seat back is on the steering wheel.

To my knowledge, there is no bypass. I simply hold the seat down with the seatbelt :)

I did get around to reading the user's manual and there's no mention of operating the PTO while not in the seat. I didn't get a chance to give the chipper another go last weekend (need to cut up some more trees first), but I did investigate the little trigger under the seat while installing my new auxiliary work lights. I think if all else fails (coldsteelva's tip, for example) I'll go with the seatbelt method. :) I'll post my light set in another post (nothing fancy).
