everybody admits it smells great

When I was a kid, we raised our own hogs and calves to slaughter, and the liver was one of the first things we used; never froze that. But I was about 9 years old when my mother went into the hospital for an appendectomy, so I cooked supper (our 3 meals a day were breakfast, dinner, and supper) and I cooked calf liver. It turned out just fine, but for some reason, the aroma of that liver cooking just seemed terrible to me and I didn't want anymore liver for 10 to 15 years. Of course, I now like the beef livers again. All my life I've liked chicken gizzards, but as a kid I did not like the chicken livers. I'll eat'em now, but still prefer the gizzards. But like Jim said, I could lose this extra 40 pounds in a hurry if I had to eat that goose liver stuff.:(

Head cheese, blood pudding, pickled pigs feet, pickled tongue or heart, beet eggs. Good times growing up thanks to my dad. Kind of scarey to think the eggs are the healthiest of that bunch. Good stuff.

I can remember back almost 50 years seeing my grandmother eating boiled cold chicken feed. I can't imagine how little there is to eat on a chicken's foot.
My grandfather buchered his own animals which he sold at his grocery store & from a truck that went door to door. He made head cheese & sausages including blood sausage. We ate heart, liver, kidney, tongue, & tripe on a regular basis -back when salt pork was "meat".
I love pickled beets & eggs. Had an uncle that was infamous for pickled eggs & beer. He'd go to the saturday night dances after a few eggs & beer, hover at one end of the dance floor until the right moment ( or just after),then dance quickly to the other end of the hall. Claims to have stopped the band on a couple of occasions!! :eek: MikeD74T

I've got to chime in here.

1. Pickled eggs are excellent snacks!!!
2. Eating just a couple won't give you gas.
3. Mixing them with beer will.
4. The easiest way to make your own is to use the liquid in the jar of Koegel's Red Hot pickled bolgna. The best part of this method is, of course, the Red Hot's.
5. You can make your own brine for pickled eggs quite easily, search the web for recipes.
6. Add mustard seed to the brine! Yummy!
7. If you're eating pickled eggs from dill or bread and butter pickle brine, you're not eating really good pickled eggs! Sure, there's dill varieties out there, but the best pickled eggs have no dill in them at all... Pickled bologna brine (especially the hot stuff) is best.

When I make my own brine, I use an entire jar of habanero peppers. An egg just doesn't pick up the heat the way meat does. If I can remember, I'll dig out my recipe tomorrow.

My brother had 4 pickled eggs with about as many budweisers one summer day I had a cookout. He still talks about how he had to brace himself while sitting on the can. He swore flames were flying out of his rear. I'm sitting here dying just typing this. One arm holding the sink, the other one against the wall, just bracing himself for the next puff of gas.
