Well I haven't had time to put up the pictures yet but I will soon. The cook and consumption was excellent. Cooked it until about 11 to 11:30 at night. Then processed it into metal trays and put a double layer of saran wrap and then heavy foil on top of the trays and into the fridge. The next day put the trays in a big cooler with ice and drove to the party. Left the pork in the trays in the fridge until 30 min before the party at which time we took them out and started to preheat the ovens to about 200 to 250 degrees. Put the trays (sans saran but with foil) into the ovens and added a tray of water under them on the lower burner to hear.
It was AWESOME and I am sold on the cook in advance technique (not all the time, but sometimes it's way easier). The meat did not dry out, it was safe and clean and I didn't have to do any work so I could participate in the event. Thanks for all the comments. I will put the pics up, I just got a new phone and am not sure yet how to get them onto the computer-I have to buy a particular cable.
