If you have an electric fryer a 10 gauge extension cord will let you put the fire out in the front yard, well away from the house.

They are pricey, but I use a 100' 10 gauge cord for a lot of projects during the year. A 50' one is about half the cost. This greatly adds to the safety of the operation.

Dennis;

You can buy filters to strain cooking oil thru that greatly extends oil life.

After clarifying the oil, put it in gallon milk jugs and put it in your deep freezer. It will stay fresh for at least a year that way.

Char-broil makes a fryer that doesn't use oil called "The Big Easy"
Shop Char-Broil Big Easy 24.5-in 20-lb Cylinder Piezo Ignition Infrared Turkey Fryer at Lowes.com
It does use propane but is much safer than oil. I have had one for a few years and they work great! Turkey and chicken!
You don't cook by time, you cook by internal temperature (thermometer inserted in thick part of bird) and when close to done you put the screen/lid on and it will make it as brown as you want.
It has a drain pan that catches the grease so you can use it for gravy and such.

Son-in-law got one for Christmas a couple of years ago and it does work very well. It would be my first choice at this time.

I've never put the oil in the freezer, but can understand how that would work well. I just put it in the refrigerator and it keeps quite well.

I used peanut oil for several years for frying oil, but I now use Turkey Gold (by Cajun Injector) Frying Oil that is cottonseed oil instead of peanut oil. I get it at the Bass Pro store, and it's claimed to withstand even higher temperatures than peanut oil without igniting and does not absorb flavors from whatever you're cooking. We use it mostly to try fish, then fry the potatoes, then I strain it through cheesecloth and put it back in the refrigerator. Been using it for a few years now and do like it better than peanut oil.

Been frying turkeys for 30 years now and use injecting and mix Tony's season and yellow mustard and smear on outside skin and it seals seasons and makes nice color. My kids won't eat turkey any other way than deep fried.

What else can one use to "clarify" the oil..........I do like the thought of a big mess of fried potatoes to go with cold white meat/mustard/fresh white bread sandwiches for the second and third day..........lol.....I always ask my wife to make a pumpkin pie extra and hide it so I can put it in the fridge and have huge hand held slices all to myself...........Yes, greedy for sure; but when ya get old one deserves a few of things you couldn't do or have so many years ago............

Can one use a couple of old t-shirts in a strainer to pour the grease through to help clean it. Gonna try something as I put the oil back in the fryer. Coffee filter????...............I do like the idea of using the freezer.........Does the oil go bad by using it day after day for how long???......I guess it just gets a taste like whatever one is cooking..........Can see that with fish..........Life is so very good....God bless........Dennis

I tried using a coffee filter once and the oil might eventually run through it, if you have a day or two to wait. We keep a package of cheesecloth from the sewing section of Walmart just to filter frying oil. I double it and use it to "line" a wire sieve held over a funnel so I'm putting the oil back in the same jug, or kind of jug, the oil originally came in.

Bird;

Coffee filters are way to fine to filter cooking oil.

Use these.

Amazon.com: 42 oz Grease Filter Cones - Case of 40: Cooking Oil Filter: Kitchen & Dining

We bought filters and the wire rack as well. Both sit in a large funnel so we can filter and drain oil back into container.

Works very well with almost no mess.

I didn't know such existed, Rick. Sounds like a good idea. It also makes me wonder how the cone paint filters would work.

Bird;

They are probably more expensive than the ones we bought. Case of 40 filters for about $10 with free shipping. $.25 per filter and designed for purpose.

I put filter in the wire rack, set both in large funnel. The fryer has a petcock on it which makes daring oil very easy. I set fryer on edge of counter in our OD kitchen, oil container on an upside down 5 gallon bucket. Open petcock and go do something else for a few minutes while draining.

Easy cleanup.
