Roasting Peanuts

Oh, no hurt feelings here by those who don't like boiled peanuts. I was surprised to hear Dr. Robert Schuller from the Crystal Cathedral in Orange County describing his experience with boiled peanuts. Sadly don't remember if he liked them or not but he described how the bag falls apart due to them being wet very accurately. But if you don't like boiled peanuts you do like grits I hope.

But boiled peanuts are like any other food, some just will not like them and that is fine and some people don't know how to cook them. Mushy they should not be, should still be firm. Not raw but sort of like stir fry vegetables. And salted just right.

Old McDonald, what is port?

On Pecans, if you want them another special way make pecan brittle. Best brittle I have ever had. My wife use to make it.

I'm southern born and southern bred. I love boiled peanuts but hate grits.

I love the cajun peanuts in the shell. I don''t see them around often, but when I do I can eat a whole bag non-stop!

This thread makes me wonder, what about smoked peanuts? I have seen smoked nuts in the little cookbook that came with one of my smokers(Little Chief Smoker), but have never tried it.

That's a new one to me, Robert. Never heard of smoking them.

OldMcDonald, thanks for the info.

Well breakfast this morning was bacon and grits. Grits are interesting food. Cornmeal and grits are both ground corn and the taste to us is very different. Only difference I know of is size it is ground to. Mush is made using cornmeal I understand but totally different taste. Grits are a good I like to cook, so many different food are great in them: cheese, eggs, gravies, and most any kind of meat.

I grew up in southern Oklahoma and north Texas, and I don't recall seeing or hearing of grits in this part of the country until the Cracker Barrel restaurants started opening everywhere. Of course grits might have been more common than I thought; just that my family never fixed them. Grits are not something we fix at home, even now, but when I eat breakfast at a Cracker Barrel, I always eat the grits, too, and even like them.

I don't eat grits. Never liked them. Until.... I went to Zea Rotisserie in the New Orleans area and ate their Roasted Corn Grits. They don't taste like ya mama's grits. Most entree's come with 2 side orders and ours are usually 2 orders of the grits.

That's a new one to me, Robert. Never heard of smoking them.

The instruction manual list various nuts "etc." on page 43 section-16. Might be fun to try on a small batch.

That same page has smoked eggs too(hard boiled).

Never heard of grits, until I ordered breakfast in Freeport Texas. Yuk. Couldn't drink the "coffee" either. As for corn meal mush, my Mom used to make something she called corn dodgers. It was yellow corn meal mush, allowed to cool and jell overnight in the frige. She would make patties out of it, something like a hamburger patty, only smaller and a bit thicker. Looked like a large, flattened hen's egg. She would fry it to eat with fish, like a hush puppy. Cut them open hot, lots of butter, and man were they good! Tasted a bit like popcorn.
