Service on a Mustang 2054 skid steer

I`m planning to do a service on a 2008 skid steer, and have some questions.

I`ve ordered a complete filter package, but havent ordered any oil yet.
How much, and what grade should I use?
It`s mainly used in summertime, I dont think it will be used bellow freezing point.

Is it anything I should check at the same time?

I use Chevron Delo 15w/40 in all my diesel engines, and change oil by analysis, except for the truck which has 10,000 mile O&F interval. I change all filters by the regular schedule.
You also might want to check all the drive belts, check radiator and oil cooler fins.
