Thanks for the comments. I've concluded that in a freeze-possible climate it's important to use an anitfreeze running through the collector, and then a heat exchanger to heat the potable water. Also need a backup heat source for those cold dark days, so that means a plumbing design like you suggested. My only roof I can use faces almost due SouthWest. I'm hoping that orientation isn't too inefficient. Nothing I can do about it because of the topology of my site.
