I've built a bunch of different truck beds. Yes, the materials you describe will result in an excessively heavy bed for an F250. I've been there and built "heavy duty" beds and regretted it later. Save the steel for another project and go lighter. The locust is fine, as long as you don't go too thick. 3/4" thick with 12" crossmember spacing works well.
