When I was in aviation stealing small planes was a common occurrence.
as was taking the avionics.

I often added an additional switch (often in plain view and mislabeled*) that shorted the magnetos.
Also the Cessnas and Pipers had door locks that used simple filing cabinet locks and on occasion I'd replace them with round key type that was much harder to pick. Like U don't fly a plane with a damaged door so you need to pick the lock.

On a tractor (done on my CUT) a hidden switch in the seat safety circuit will do the trick.
Well, I actually I simply pull a wire off of the switch as it wants a closed circuit to operate.

*LOL "ejection seat power"
