My sister was an outside sales rep and on the road 5 days a week. she taught me that it is okay to brake for an animal, but never ever swerve. And never brake hard enough so that it is a danger to you.

I remember reading somewhere that modern cars handle better swerving than hard breaking - but my instinct is to hit the brakes too.
