Some people find a wide range in flavor from young to old.. to me, game meat is game meat. I find more difference in deer in rut than not in rut.
I expect wild meat to taste gamey vs public pork, beef, turkey.. etc.
Of course when growing up, if we had steak for dinner, that meant deer.
