The recipe says to "cook squash" but doesn't say how you cook it, nor whether it's chopped, pureed, mashed, etc. or what kind of squash. Then it says measure 2 cups, but doesn't say tight pack or loose pack. Hey, some of us need lots of help and details.:D

However, I used yellow squash, moderately finely chopped first, then I cooked it in the microwave, and measured 2 cups slightly packed. Was out of butter, so I used margarine. For the cream, I used whipping cream (not whipped, of course)

Now my first thought was to just make one pie to try it, so that would have meant halving the recipe and I was fresh out of half eggs, so I made two pies and just now got them in the oven.:D

I had to go somewhere shortly after taking them out of the oven, so by the time I got back they were cooled down to room temperature. I tried the first couple of bites without whipped cream. But then we have a can of that aerasol spray on whipped cream that I added.

Yep, very good with or without whipped cream. I like it a little better with. And I think your wife is right. A little more sugar wouldn't hurt, although I may not change that. But I think I'll add a little more cinnamon next time and might even add a little more flour to make it set a little firmer.

You're very welcome... My wife has two in the oven now. I always plant too much squash, so I have to get creative to make use of it all.:)

Bird, I don't think you are hijacking my thread. You are making me hungry and jealous, but not feeling hijacked at all.:)

I told my daughter about this recipe today and she told me she always puts a little cinnamon in her squash and a little nutmeg as well. I'll be doing this recipe soon because I'm picking about 5 lb of squash every three days now. I have to find more uses for it soon.

Almost forgot. . . clenhart - Thank you very much for the recipe. You Louisiana boys sure know how to cook. :)

Jim, as I said, these pies turned out good, but I think doubling the cinnamon might be even better. I'm still not sure how Mrs. Clenhart prepares the squash. I first thought about steaming it, but instead I chopped up 3 good sized yellow squash with the Oxo Chopper, so it was pretty finely chopped. I didn't add any water; just cooked it in the microwave 6 minutes, stirring it every 2 minutes. With loosely packed 2 cups, I had about a fourth of a cup or less left over, so I sprinkled a little salt and pepper on the leftover squash and ate it.

And awhile ago, I warmed a piece of the pie in the microwave, then shot that Land 'O Lakes whipped cream on it, so I've eaten half of one pie today.:D

Well, I haven't gotten around to doing the squash pie yet, but I sure have stir-fried a lot. We are getting about 10 lb of squash, 10 lb of zucchini and 10 lb of cucumbers per week. My okra is starting to make and I've picked about 2 lb. I also have a handfull of sweet banana peppers and two tomatoes. The tomatoes are set to really start producing. It's a race between them and the peppers. My cantaloupes are absolutely taking over. The vines are healthy and trying to cover everything. Little cantaloupes are everywhere. The bees are all over them and the cucumbers. I've included a picture from a week ago. I'll try to get another one today. The difference each week is amazing.

Last night for dinner, I fried some okra in olive oil after flouring it. With the left over oil, I dropped in a whole chopped onion and cooked it until it started to brown. Then I put in about 1-1/2 lb of sliced yellow squash and a little of my fresh basil. When the squash was cooked and starting to brown, I mixed in a can of cream of mushroom soup and about two cups of rotini noodles. The only additional spice was salt and pepper. With the squash and okra, I sliced a fresh tomato. I heated up a left-over biscuit to go along with my meal. What a great dinner!

I'm jealous, Jim. I do miss my garden. However, I did pick one nice tomato yesterday and Margaret has already picked 2 more this morning.

It was obviously just the mockingbirds. I saw that one eating on a tomato, but after I put the "bird stop" netting over the plants, nothing has bothered them since.
