I clean 'em and leave them whole with the heads on. Then I heat up about 1/2 stick of butter in a cast iron pan and sprinkle the pan with salt (keeps it from sticking). I slice up a lemon and put lemon slices, pepper and minced garlic inside the fish and cook slowly - 10 minutes per side till golden. I add a bit of white wine to the pan near the end and serve with lemon slices.

The cheeks are the "tenderloins" on a fish.

Yikes, Pat!!! /w3tcompact/icons/shocked.gif

I just finished lunch, but now I'm hungry all over again. /w3tcompact/icons/crazy.gif

As soon as I can put a couple million bucks in the bank, I'm thinking of gathering up a group of TBN'ers and heading to upper Michigan. Got any suggestions for a good place to stay? /w3tcompact/icons/wink.gif

Well Harv, I've got plenty of fish in the pond and plenty of room - soon to be more. My daughter and son-in-law plan to move back to the area so we're planning to build another house on the property in the spring - that's almost too darn close to live near your kids./w3tcompact/icons/crazy.gif

That does sound delicious, Kerr. Fresh fish that's never been frozen is sure hard to beat.
