You might want to call around and see what the vacancy is like. Spend one night at an unknown hotel and case the area out to find a better place. Better yet, take a day trip into Vermont or the Adirondacks and stay somewhere else.
A lot of the hotels around the area cater to the horse racing community in Saratoga, so there might be more flexibility than you think. I'd definitely ask around though.
Another option is to rent a house on the lake. You can call the Lake George Chamber of Commerce on that one. Also, Bed and Breakfast's abound 'round there.
Make sure you get away from the commercial aspects of Lake George for a little bit of time. The Hudson valley around there makes a great road trip!
