Years ago I built a mower for mowing irrigation ditches. I started off with 1/4" cable to mimic a grass whip. 1/4" cable lasted 1/4 mile and 1/2" cable lasted 1/2 mile. So plan B. Heavy duty #60 roller chain lasted a long time but was slow cutting so I added a piece of mower sickle blade to the end of the chain. In the end I went with discbine blades as they lasted the longest and let me cut a lot faster.
That being my experience I wouldn't install chains instead of blades in you mower. They won't cut as well and they will use a lot more horsepower.
I have an old John Deere 506 rough cut mower that was given to me. It will spit out pieces of rock at times. I don't worry about the blades breaking. Maybe you need to get a heavier mower or hire someone with a heavier mower to do the job the first time.
