This is a favourite at home with all the family, no hard and fast rules with the ingredients, adapt to suit:
1 or 2 chicken breasts cut into about 3/4" cubes and flattened with a meat mallet.
Dark Soy
Sesame Oil
Sambal Oelek or any good ground chilli paste
Juice of one lemon
Dry sherry
Peanut oil
Baby potatoes
Mango slices
mix all the sauce ingredient but not too much sesame4 oil, I go about 4:1 soy to sesame oil, put in chicken and mix well then add a couple of tsp of peanut oil to coat it all, leave for an hour or so.
Microwave potatoes for about 7-8 minutes allowing 3-4 per person then crush carefully so they are flat with the skin on.
Prepare plates and put in a layer of iceberg lettuce, fry flat potatoes in peanut oil in a wok and drain on absorbent paper, put chicken in wok and cook until done, spread chicken over lettuce and arrange potatoes around them along with mango slices, sprinkle with sesame seeds or fried spring onion/shallots.
Adjust chilli paste to suit your own taste, this dish gives you a hit of heat and chilli, crispy potato, crisp cool lettuce and soft sweet mango.
Follow with cucumber sorbet before dessert.
