When I worked at McDonald's, I had to clean the fryers which involved cleaning the oil and the element. These things would catch fire if you didn't pay attention. We were always told to cover with the lid first and then use salt if the lid didn't work and finally pull the auto fire extinguisher.
Covering it with the lid worked for me most of the time. The salt seemed to absorb the oil causing the fire to go out, but when using large amounts of oil you would need a tractor bucket full of salt. I cleaned the vats through high school and college and never once had to use the fire extinguisher, just cover it up and let it go out by suffocating it. Hot oil will mess you badly and do so very quickly.
