There are several variable speed down well pumps out there that do not require pressure tanks. In your neck of the woods there are probably several dozen irrigation system experts. Have them design a system out for you to set it up correctly. If your well driller does this too, sit down with him and get the layout he recommends and will stand behind.
I have a Monro 3 HP pump that will do 60 GPM at 60PSI at 25 foot of lift, so 7.5 sounds a bit much, however are you looking at a down well pump, or topside lift pump?
Also many irrigation pumps can pump a less GPM up to a point. In my case I have a lower limit of 5 GPM before cavitation, then my pressure switch will kick it off.
PS it is critical that you install a low pressure cut off, so if things go dry you don't burn the pump impeller up.
