We are looking at building a 6x6 pump house below grade using concrete block

My first question was "Why put in a well pit?". Put the pressure tank, pump controller etc. in the house or other all-season structure. Doesn't take that much room and then you have all the maintenance stuff right there where you can get at it. Poeple seem to be convinced that the controls and pressure tank just HAVE to be right at the well. They don't, they can even be a 1,000 feet or more away and function just fine.

Well pits are:
1. expensive to build,
2. usually very cramped and hard to work in.
3. Make no sense if an all weather structure is anywhare around with space for about a 3x3' area.

Ok, let's put the root cellar in a different location, can I get some advice on the building aspect now?

We want to use the concrete blocks, thinking the 6" wide blocks 8" high, 16" long. Planning on a footing to start them on, gravel floor.

With your clarifying statement, I understand your snark! And I wish we had built in a root cellar. Potatoes and onions don't last long here and certainly when stored close to each other (not sure which one kills the other but really doesn't matter). It's worse in the winter with radiant in-floor heat. Anyway, try a "google" on root cellar cinder block.
