Actually I don't think weeds .vs food crops have an equal chance. Indigenous things have already adapted to the area. We can and do get grass to grow in the desert, but it takes a whole lot of water!!
That is what I mean, man usually overcomes most things. You can make grass grow on cement also. I had a bag of grass seed that got wet, and it grew out of the bag, no dirt.
Now, you know that stuff only kills things that are green and above the ground, and it will not do anything at all to seeds or tubers, etc. Although I did manage to kill about 5 azaleas by spraying close by, and a rain shower came over and apparently washed some of it into the root system. Using plastic and mulch in the garden will let you get ahead somewhat. How about those upside down tomato plants, do they really work. Seems like they would be weed free.
