Bird,
I use good grass fed beef, so I don't overcook it if I can help it. We chop the bacon and partially cook it in a pan, then mix the bacon (1lb) and 2 lbs of good beef, and 1 egg in a giant kitchenaid mixer bowl, press into burgers and tonight I smoked/bbq'd them over cherry & pear wood, I even smoked the sharp cheddar on top.
We never make bacon burgers the other way anymore.
Scrumptious is the word, and bacon in every bite!
