We watched a cooking show on PBS this weekend,, they showed a REAL great idea,, that I will try with the instapot,,
They grilled two pancakes, and two hamburgers on a griddle,,
on one side, the pancake and burger were "browned" better than the other side,,
They had added baking powder to the pancake mix on the browner side,, and had applied baking powder to the hamburger that had browned better,,
The explanation was the baking powder changed the pH,, which increased the browning.
This would be a perfect answer for food that is slow to brown in the InstaPot,,,
